We are temporarily out of stock for our longest aged product (Over 40 Months) until 31 January 2016. The ‘over 24 months’ and ‘over 30 months’ versions and all our other products are still available.
Our Parmigiano Reggiano cheese is not just manufactured, it’s crafted using the oldest time honoured traditions and high quality milk from the red cows of the Reggiano area. No cutting corners. It’s made just like it’s always been.
Our milk production is selective because of the number of animals involved and their breed type, which gives smaller quantities than other breeds. We also look for quality in the care and attention given to the milk and in its distinctiveness. Compared to the 3 million traditional Parmigiano Reggiano moulds that exist, those for red cow Parmigiano are limited to 14,000.
It’s a type of niche production, which is increasingly appreciated, but still needs better safeguarding and recognition to continue. We are proud and touched to see that the appreciation shown by our dedicated connoisseurs has exceeded our best expectations. Despite having doubled the number of moulds for over 40 months ageing since last year, this product sold out earlier than anticipated.
We are certain that you, together with us, will have patience, which is an attitude as old as it is wise. We have no short cuts or quick way of doing things. We simply have to wait for time to run its course.
